But can't you do this simply with VFO B, without an RX2?

Another benefit not yet mentioned by the others is working DX on 40m SSB.
RX2 allows you to listen to the DX station & his receive (pile-up) frequency
simultaneously.
I am a single-antenna station & use RX2 in this way all the time.
