The first is - should the Cessna constantly turn to the left? I know that planes don't fly straight and level without input from the pilot, but this seems extreme. With my hands off the controls it will roll almost to 90 degrees within a few seconds.

I was having the same problem. I corrected it by adjusting the aileron trim. Go to "Browse Internal Properties" and select controls/flight/aileron-trim to enter the required value.
