Ed,

I'm running linux, but let's see if this helps.

js_demo and fgjs executables are installed in
/usr/local/bin/

This is a directory that you should be able to find on
your system.  If your directory structure is different
or the files aren't there, can you use a search to see
where they reside on your Mac?

As far as axis on the joystick, I edited the file

/usr/local/FlightGear-0.9/data/Input/Joysticks/Logitech/extreme-3d-pro.xml

to make the joystick control things like speedbrakes
and rudder trim, etc.  Maybe that's something to try.
