OK, first some stuff you've probably tried already: Have you tried
toggling the 3D/2D cockpits on/off using "c", toggling the panel using
"P", and cycling the cockpit style using "s"?
Secondly, if you're using a 2D panel, you can only see it if you are
looking straight ahead - as soon as you pan around, it will disappear.
Thirdly, which aircraft are you seeing this with, all of them, or one in
particular?
The panels/cockpits are obviously plane-specific, and some are more
advanced than others. For example, the current C310 (non u3a) version
claims to have a 3D cockpit, but doesn't at present.
