I am not an expert,  
if you look at, in detail the bo105.xml file 
you will understand better than i can explain

The commands are

For Tail Rotor
/controls/flight/rudder
/controls/engines/engine[1]/throttle

For Main Rotor
/controls/flight/aileron
/controls/flight/elevator
/controls/engines/engine[1]/throttle
