Why not Linux? You'll get a thinner OS and better scheduling, leaving you with more resources and less jitter when running FG. Make sure though that all your hardware is supported (but as you're building it from the scratch, just select the right components). Wouldn't get you into support worries either (it may well happen that some of the newer hardware won't be supported by your older Windows).
