Finally, I built Atlas for Mac OS X (10.4 or later, universal binary).
You can download it from:

Here's the very brief info on using Atlas on your mac.

How to install:
1. Download it and extract the tgz file.
2. open /Applications/Utilities/Terminal.app
3. cd <where you extract tgz file>
3. run install.sh inside atlas-macosx folder

How to use:
1) Open Terminap.app
2) cd /Applications/FlightGear.app/Contents/Resources
3) ./atlas.sh (it uses port 5050 for communicating with FlightGear. I chose 
5050 since 5500 is used for terrasync)
Sorry, the GUI launcher doesn't have automatic Altas launching feature at this 
moment.
4) execute FlightGear with --atlas=socket,out,1,localhost,5050,udp
(You can specity --atlas=socket,out,1,localhost,5050,udp in command-line 
options on "Others" tab in the GUI launcher.
5) Take off and see what happens

See README.txt inside the package for more info.
If it works on many Macs without critical bug/crash, I'll consider adding it to 
the next official release.
