Not quite clear from your description if your field is a calculation, or, as the phrase 'Auto-Enter' suggests, a date field that auto-enters a calc.
If the former (calculation), then setting the field to unstored will allow it to re-jigger when the date changes, but you won't always see that re-jiggering, as it may require some sort of activity to force it to update. If the latter (non-calc date field), then it will not update except when a new record is created.
