You don't say whether you're using Mac OS X or Windows, nor do you say which brand and model of UPS so I can't help with any specifics per se.

The more expensive UPS units have the capability of running a shell or command script at different points (e.g. on battery, on battery for x minutes, x minutes remaining on battery...). Depending on the runtime of your UPS unit, its capabilities, and the size of your solution you should consider the amount of time it takes to close the files normally, treble that, and configure your script to run when the UPS has that much time remaining.
