Steve, Does the format "[email protected] (first last)", no quotes, work for you? I found this article about using SMTP, but perhaps it works better for E-mail Client, too: <http://www.savvydata.com/blog/2009/11/fixing-smtp-send-mail-error-1506/>
Also, perhaps it is relying on AddressBook application for the displaying the name? If there is no entry, does it work? I'm just guessing!
