Hi James,

there is no "plain" text. And text can be really complicated.

My text editor Bean shows the encoding at the bottom of the screen. If you only 
have english characters you most likely have ANSI or MacRoman. But it also can 
be UTF8, especially when you have non-english characters.

If you want to have fun you can try to load your text into a hex editor. There 
you can see if you have anything funky.
