CMYK, yes, with FOP 0.94. Spot Colors haven't been implemented, yet. Unfortunately, there's no documentation on how to use the special color values. The recomended way is probably to use rgb-icc with a CMYK ICC profile. The proprietary cmyk() function is only for uncalibrated CMYK.
