Just to be clear, it has been claimed in this thread that the CheckUser right also gives those admins the right to collect additional data on users and analyze it. I've just read the privacy policy and that is not true.
You'll also find [[Privacy policy]] interesting, although you might decide to edit it to make sure that it no longer mentions the word "legal" so that your argument can continue to be true, at least to you.
