Just to clarify, those are three keys, not two separated by a dash.

Press Esc, the hyphen/dash key, and h.

That doesn't seem to be it. I want to insert the -...I just don't
want the break to happen at that point.

Left to its own devices, I end up with:

  UNIX Procedures for CD-
  ROMs

Instead, I want

  UNIX Procedures for
  CD-ROMs
