Under Edit>Preferences you can set the books to open as a floating tab by 
unchecking the Open Composite Documents as Tabs.

Hi Craig -

I'm doing that but every time I close the book and re-open it, it goes back to 
its original state. I'm wondering if there's a way to set a default for all 
books to open detached and smaller.

You can detach the tab. You can also resize it along the right edge and make it 
narrower.
