I suspect that Frame pulls the top-level heading text from each component of a book file when the component is added to the book, and then stores a snapshot of that information in the book file so that it doesn't have to re-scan all the components of the book whenever the user changes the view of the book file. If so, the only way to update that information might be to delete the component with the out-of-date heading from the book file and then re-add it.

To the right of the Find/Change button (the magnifying glass) is a button with lines on it. Clicking it will toggle between displaying the file names and the "heading text". Hover the mouse pointer over the button to see the tool tip for each toggle. When Display Heading Text mode is selected, one of the chapters displays erroneous text instead of what I specified for its Heading Text. I don't know how/where these values are set, however, so I don't know how to change it. Frame's Help isn't helpful.
