I've been using iStopMotion at the media lab where I teach.
Check the list of compatible cameras before you get going.

There's a demo version and there are occasional beta releases that work for
different cameras - we got our Canon T3i working on a Beta release of
iStopmotion only to discover that it stopped working in a later beta and full
release, so we have to keep the old beta around.
