ONION SOUP WITH MELTED CHEESE

1/4 cup unsalted butter
4 large white onions, thinly sliced
1 tsp sugar
1 tbs flour
3 cans 10.5 oz each beef broth
1 broth can of water
1/4 cup dry red wine
1/3 cup garlic flavored croutons
4 slices of Swiss cheese

Heat broiler.* Melt butter in saucepan. Add onions, stir to coat with 
butter. Cover, cook 8 min. Add sugar, cook uncovered until onions are 
slightly golden. Add flour, cook 1 min. longer. Stir in broth, water, 
and wine. Cover, simmer 5 min. Place 4 bowls on baking sheet. Put 
croutons in each. Divide soup among bowls. Top each with a slice of 
cheese. Broil 3 min. or until cheese is melted. Place bowls on 
serving plates and serve with crackers. MAKES 4 SERVINGS OF ONION 
SOUP WITH MELTED CHEESE.*
