I've only made 6.2 ones but I don't see why 7.0 wouldn't work.
I have made a 7.0 live CD using a modified set of scripts from
freesbie.org
(http://www.db.net/hamfreesbie), I have not yet released it however.
Perhaps: http://people.freebsd.org/~db/freesbie_notes.txt might be
useful.
