Courier-IMAP supports SASL (PLAIN, LOGIN, CRAM-MD5, CRAM-SHA1).

Most IMAP clients I know of support SSL.  Outlook, Outlook Express,
Eudora, Netscape, Evolution, mutt, pine, ...

Which IMAP clients don't?
