Take a peek at /usr/ports/mail/Sendmail/Makefile. There are tons of flags to be thrown, and I'm willing to bet that you can make a couple of tweaks there to get the result you wish.

If it's just throwing it on the command line, you might want to consider putting the flags in /etc/make.conf.
