The simpler the solution, the better.
If it's actually the envelope "from" that you're keying on, you can do that pretty simply with the sendmail 'access' file. That approach doesn't scale particularly well, though, so if you're going to want to continue tuning anti-spam measures, jumping into spamassassin or some other full-fledged solution is worthwhile.
