I'm looking at switching to 'freebsd-update' - is there an equivalent
way to get it to update me to '-STABLE'?

No. The freebsd-update program can only be used to follow
the RELEASE branch, plus the security updates (RELEASE-pN).
Following STABLE branch still requires you to update by
source.

Ok, as csup is 'deprecated' - I guess what I need to do is move over to Subversion instead? - As 'freebsd-update' is only going to get me release + security (-pX), not 'stable'.

At the moment we have a local host that has the entire FreeBSD source tree on it - so we can just 'cherry pick' versions we need to update - I'd guess / hope a similar setup is possible, but with Subversion...
