This is a bit of "the long way around", but I've done it, so I know it works.
We set up a temporary IMAP server, and used Outlook to copy all the mail and folders up to the IMAP server. Then you can just connect to the IMAP server with your new mail client to get at all your stuff.
Agreed, this is probably the safest method.
Rather than "temporary," why not just keep your email on the imap server? That way you can try lots of different email clients, as long as they support imap. 's what I do.
