I'd like to say that this is a trivial thing to do, but I kind of doubt that it is. I know of no easy way to do this because X as it is now, assigns a "head" to a screen (where by head I mean a video card output) and in doing so, makes the "head" atomic in a sense. What it sounds like you'd like to do is create something smaller than this and assign it to a screen. It might be substantially easier to just purchase more monitors or learn to use virtual desktops.
