You may need to play with the APIC settings. I haven't tried an 800, but it can't be too different from the others of the same era.
Make sure you've got the latest & greatest firmware for the box as well. Early firmwares seemed to be a bit ordinary in how they presented SMP to the OS
I also recall people having troubles even with the 'correct' OS setting until they run the system erase utility, update BIOS etc, then set the OS to 'Unix' or 'Linux'. The key here being the erase utility...
