The obvious place a professional writer could help is with the manual. Did your download include the manual? If not, you can get the source for it here: https://sourceforge.net/p/freecol/git/ci/master/tree/doc/FreeCol.tex While we do try to keep it up to date with new features, I have no doubt that it could be improved in many ways.
