As a data point, I'm using the following for several months now :

deb http://httpredir.debian.org/debian buster main
deb-src http://httpredir.debian.org/debian buster main
deb http://httpredir.debian.org/debian buster-updates main
deb-src http://httpredir.debian.org/debian buster-updates main
deb http://security.debian.org/ buster/updates main
deb-src http://security.debian.org/ buster/updates main

So you shouldn't break much ;-)
