I don't know if you've solved this or not yet, but in case you haven't,
I just ran in to the same problem with my CentOS box. Investigating
further it appears that when you switch over to static IPs, the
configuration tool doesn't kill the dhcp client, so it keeps on
chugging, and renewing your IP address. Restarting the system should
work, or just killing the dhcp client will do.
