Well, I am not sure whether you have to use Exchange just because you run Windows Server. Also, whether Outlook/Express is the default MUA is the matter of OEM. I am using Windows XP on my notebook and still I am happy with Mutt for e-mails. For home use, I would probably recommend Mozilla or Firefox/Thunderbird for ordinary users (if they'd refuse to use Microsoft stuff). Exchange, Outlook, Office, ... have nothing to do with design of the operating system. These are optional tools, offered by the same company. You don't have to use them. And when it comes to operating systems, I am really not very happy with the support the Linux Kernel offers for e-mails (just kidding).
