Nice ideas! :)

Let's stress that it's a 2-steps course : 1) study the project
architecture and 2) implement something.
It should span 3 months, during which the student(s) would be present
on the mailing list.

I sent the ideas to the teachers to get a first reaction, and more
details about the students level / speciality.
