For one thing, I have a management console that runs nothing but Smartview Tracker (log viewer)sitting to one side of my work station. It tails the logs and automatically updates with network traffic. Not only does this give you a nice warm fuzzy about your firewall working fine but it also confirms lots of your other services as well. A very useful diagnostic tool if you suspect connectivity problems. At least weekly you ought to log in to your firewall and check system logs and disk space/memory issues depending on your platform. Besides that there's automatic notifications you can configure in the FW, and 3rd party network monitoring tools are very useful to keep track of FW health for you.
