How much memory, CPU speed and HDD space you need, all depends on the size
of your network, the troughput your box will need to handle and the amount
of logs it usually generates. So for that kind of selection, I would
recomend for you to check the Platform Selection Guide link bellow:

About the specific model  of Dell server you mentioned, it is listed in the
compatibility list for SPLAT, but if you check the link bellow, will see it
requires a specific media pack that already includes some patches, usually
this is because the HDD array controller included with that hardware was not
supported by the original releases.

Finally regarding the choice of one or two CPUs, since you mentioned that
are running R55, it is clear you still have Pro or Express licenses, for
those you in fact need to have an extra license for the Performance Pack
(Secure XL) in order for Check Point to fully take advantage of dual
processor hardware, otherwise it is better to have a single powerful CPU. If
on the other hand, you are thinking to upgrade to the new VPN-1 Power
license, then dual CPU support is already included and you so not need any
extra licenses.
