Posting a solution to the list for posterity should anyone
want to use a X2200 M2. I got some help on this from our Sun
reseller.

You can completely disable the nVidia fakeraid in the SATA
driver, but you need to do it from the "standard" BIOS menu,
not the SATA controller's menu. During boot, break into the
BIOS with the F2-key. Go to the "Advanced" menu. Choose the
"IDE Configuration." Then simply disable the "nVidia RAID"
option on that page.

Now the BIOS will see the two individual drives and allow
you to boot from them independently. Since the BIOS and
the OS now have a harmonious view of their universe, all
is well and the system will boot...

Now I need to figure out how the numbering of eth0, eth1,
eth2, and eth3 correlates to the LAN0, LAN1, LAN2, and
LAN3 printed on the chassis. They don't correspond in the
obvious manner.
