Hello,
  I am implementing similar policies on my firewalls, and I simply installed
AOL, ICQ, MSN, Yahoo, etc. on a test box, and watched the firewall logs when
connecting.  You find the servers that are used to connect/authenticate
users to the chat services, then block them at the firewall level.
