Ok, sarcasm aside:
1.) SMTP is way enough for mail. DNS and ident may be needed in parts,
depending on your actual setting. Plus maybe access from LAN
to DMZ for administration.
2.) A firewall does not make anything secure. No product
does. It is the process and the people constantly
working on it and improving/responding. So decent firewall
training of the administrators and constant surveillance of
the firewall is paramount.
