If you do an upgrade in the early hours, and something goes wrong, you have
much less time to restore.

On my last job the first hours of a business day (07:00-08:00) were much
less frequented than "after hours". In fact, the least use hours were
distributed like 05-06, 06-07, 04-05, 07-08 after (!) that followed
03-04, 02-03, 08-09 (!), 01-02, 24-01, 23-24 etc. until 18-19h (plus
nearly flat usage between 09-18). So simply have a thorough look at
your statistics on when to annoy your customers.
Better update the standby FW (you have one, don't you?), switch to that,
see if it works and after that update the "workhorse" for this will
shorten the time needed for maintenance to some seconds (switch time) -
theoretically as always pending problems.
