First off, who you are using for an ISP should be a "real" ISP.  AOL,
Compuserver, Netzero, etc will not work.  The ISP needs to use dial-up
networking using PPP protocol.  Edit the entry for this ISP so that "Log on
to Network" is selected.  Once you dial-up and configure your site, your
domain logon should appear.  Outlook will then connect with the Exchange
server.  

If this doesn't work you may want to check you VPN rule or any settings
within Oulook.

I intend to run Outlook client via VPN (Secure Client) with our Exchange
server
What do I have to do to get all the functionality?
I run Secure Remote Client from outside.
Authentication and encryption seems to work fine, but I have no idea 
what to do on the Outlook side. How to log in to NT domain or NT Exchange
server.

Anyone who knows WHERE I could catch some information about this subject?
