I've definitely experienced this and I'm sure many many others have too. The reason behind it is that OS X is basically looking through *all* apps on your mounted drives to see if they want to get in on the "I can open a .url file!" game. I believe that the reason it speeds up when you choose smaller files is similar to the reason that it takes so long to drag and drop a large number of files onto an app's window, such as iTunes -- the Finder takes its sweet time to make up an info record for each and every file, with details like its name, extension/file type, icon, etc. for each one. Some things that appear to speed it up (no, most of these aren't practical...): unmount volumes not containing apps you want to use to open the files, delete or archive unused apps, blah blah blah. I have NOT, however, heard of any practical workarounds. I don't think that helps, but you have at least one person who sympathizes with you!
