If the only thing you want to do is make a copy, then you can use an
application like Toast which will make an exact duplicate, no quality lost.

If you want to import the songs from your CD into iTunes, then prior to
importing, go in the iTunes preferences, under "Importing". There, you can
select which encoder and what quality you want.
