One of the hardest things about going to Mac from PC is realizing that while on a PC, you might have to click on many areas and read several prompts and follow directions through various wizards to do the same thing on a Mac that might only require one click. The first thing you should do is boot the hard drive from your OS 9 CD by holding down the C key, etc. After the Mac is booted, double click on Drive Setup. This is where you can specify your partitions, etc. You can also perform a low level format if required. This type of format will usually wipe out the HDD completely, but will take some time depending on the size of your drive. Your next step is to double click on the Install OS 9 icon, and follow the instructions. There really isn't a need to worry about partitions at all just so you know. Once 9 is installed, restart the Mac and make sure it boots without any problems. Now you are ready to install X. Simply pop in the X install CD, follow instructions. The CD will reboot your computer for you so it boots from the CD. Don't worry about it erasing 9 or partitions. This is all done automatically. In the prompts during the install process of X, remember not to select anything in reference of "erase drive" or "fresh copy of" etc. Just make sure you have selected a "basic install of OS X". The whole process will take several hours, depending on the size of the drive, options, etc. This is probably one of the only things on Macs these days that take this long with the exception of rendering in Photoshop. :) When you get your 9 CD, grab a sandwich, make yourself comfortable, and have fun!
