Is there a way to uninstall and application that will also delete ALL of the preference files for that application? I'm having a problem launching Adobe GoLive and want to try and reinstall it; I don't want the old prefs causing a problem.

Unless Adobe has an uninstaller, you'll have to go into ~/Library/Preferences and delete the prefs manually.

Try trashing the prefs first, that could well solve the launching problem.
