Do both halves of the conversation output from the computer speaker? OR, can you echo your mic output to the speaker (careful of feedback I guess).
If so, you can use WireTap, from Amrbosia softwarre I think. they have a Pro version for not much money and if you google you cna find their old freeversion as well.
Takes any sound output from your computer and makes it a file in aiff (free) or mp3 (pay). You can tweek the audio quality etc. to keep file sizes reasonable for phone call quality. There's a free convertor to make aiff a mp3 later if you wish.
Might not be useful for you, I don't know how your sound setup is, but if you can get both parts of the conversation to output from the speaker this will make your logs for you.
