The only OS I've ever had issues with flash drives with is Windows98. I've never had one that didn't work with OS 9 or OS X.
One caveat: On OS X, at least, ALWAYS properly dismount the drive before removing it, by dragging it to the trash first, especially if you've written files to the drive in that session.
95% of the time you can get away with it, but that one time in 20 your drive catalog gets hosed; reformatting the flash drive is the only cure. This may be more of an issue if the drive is nearly full. I had 250 MB of files get turned to 4K stubs, and the disk still read 250MB full. Disk utilities were unable to help, I just reformatted it.
Burned once (i had a couple important files that only existed on the stick), I'm careful about it now.
But don't worry too much; that's all the trouble I've had in > 2 years of owning that one.
