wiring meant for phone use isn't good enough to be used for ethernet
unless it's a fairly new house wired with ethernet in mind.  the
ordinary phone cable isn't even rated for 10bt, much less 100bt and the
way it usually branches to other points in the house (rather than from
the room with the computer to the room with the hub/switch) will cause
reflections.  it might sort-of work, but you are going to get
reflections which will damage the packets and result in allot of
resending of the same data and really slow down the network.  

now, if you can get to the ends of each particular piece of cable and
eliminate the branching it should work fine assuming it's new enough
wiring (even if it goes from where you want an end, to another unrelated
room(s) and then to where you want the other end, so long as it doesn't
branch).  if it's old wiring you will have problems because of the cable
quality which will again damage data packets and result in allot of
resending of the same data and slowing of the network.  not only does
having to resending data slow down the network, but with a high error
rate you are going to have some damaged packets that look good to the
receiving machine even though they are corrupted.  this will do
interesting (read bad) things when sent to the printer or another
machine, especially if it's a program being copied from one machine to another.
