I converted my Beige G3/333 to UW-SCSI, using an Apple/ATTO card, FLASHed to 
ATTO and then FLASHed again with ATTO's latest firmware.

I installed two 18.3 GB UW-SCSI drives (one in the "attic"), for high 
performance storage, and a 60 GB 7200 rpm UATA drive with an ACARD UW-SCSI 
"Bridge", for low cost storage.

I also placed a DVD-ROM on EIDE Bus 0 Master and a CD-R/W on EIDE Bus 1 
Master.

An ATI Radeon 7000 Mac Version is the only video (the built-in video is not 
used).

A 533 MHz G3 ZIF replaced the 333 MHz ZIF. 

It's been a rock-solid, no compromise machine.

I recommend sticking with UW-SCSI drives for maximum performance (as your 
machine is already UW-SCSI based), unless you really need lots of low cost 
storage, in which case I'd go with an UW-SCSI "Bridge" for that low cost 
storage, rather than be limited by the 16.67 MB/sec of the built-in EIDE 
controller. But, the built-in EIDE controller is certainly an option for 
REALLY low cost storage (and accepting the limitations of the built-in EIDE 
controller).

On another machine, a Beige G3/300, for which I don't necessarily have high 
performance expectations, I've been quite happy with two 60 GB 7200 rpm 
drives on EIDE Bus 0, an EIDE CD-R/W on Bus 1, and a SCSI CD-R/W and a SCSI 
DDS-2 tape drive on the internal F-SCSI bus.
