Neither printer is PostScript. The gibberish you get
printing from the Mac is the printers poor attempt at
interpreting the PostScript commands. The 1100 can
probably never print from a Mac. The 3320 may be a
possibility if you research Third Party options (such
as PowerPrint and others). If the only connection to
the 3320 is USB then networking from a Mac may be
futile. HP may have emulation software to print direct
from a Mac with the printer direct connected to the
Mac usb port. 

You need a PostScript printer (inkjet or laser) that
autodetects PCL or PostScript to print trouble-free
from both Mac and peecee. 

I recently bought on eBay an HP DeskJet 1600CM
(PostScript and PCL, color, 10ppm, Parallel and
Ethernet connections) for less than twenty bucks plus
another $25 for shipping. Any Apple LaserWriter that
does both PostScript and PCL should work with the
Parallel connection on your printserver. Make sure
there are drivers for Jaguar.
