I'm using stock video and a 19" Samsung monitor on my G3 B/W. It takes a long time for my monitor to light up in single user mode. I usually just hold the keys down for about 30 seconds (more than long enough to tell the machine what I want to do) and then wait for the monitor to kick on. Don't know if time would make the monitor come on with non-stock video card.

Well, for the time being, go back to stock video. Single User Mode is trying to use that.
