Or you could do it the easy way. In iTunes, open up the Preferences panel
(iTunes menu > Preferences) and select the Importing pane. Choose "MP3
Encoder" as the "Import Using:" option and select your settings. Close the
Pref panel. Once you've done this, "Convert selection to MP3" will show up
under the Advanced menu.
