What kind of cpu upgrade options do the 'dual' machines have? How much faster is a dual compared to a single?
The duallies have all the same upgrade options as their single-processor brethren; you can go up to about a 1.5 GHz G4 right now.
As for your second question, that's easy: 'it depends'. ;-) Software that uses both processors will be about 1.75-1.9X faster, software that doesn't wont be faster at all.
OSX does incorporate multi-processor functionality, so some some aspects of the OS are sped up. Again, it depends on what you want to do. Most programs that do cpu-intensive tasks have been modified to accomodate dual processors.
If you're just going to turn around and buy a CPU upgrade, I'd get either of the cheaper systems, if you're going to use it as is, the duallies are the better buy, as they have bigger hard drives, too.
